Kanel: A Swedish Bakery in Greece with a Scandinavian Feel

Architecture and design studio Fluo recently completed a new family-owned Swedish konditori (bakery) in Thessaloniki, Greece. After years living in Sweden, the owners returned with a traditional Swedish recipe for kanelbullar (cinnamon rolls) in hand, inspiring the opening of Kanel.

The designers went for a Scandinavian aesthetic, while keeping in mind its Greece location, by dividing the space into warm and cold zones. The warm area was painted in a muddy terracotta that wraps the bar and prep space for a cohesive, nest-like feel. The corridor and seating area make up the cold section while acting as a pathway to the nest.

In the seating area, a graphic mural in earth tone colors connects the two spaces together while making a bold statement.

The neon signs share the bakery’s philosophy and become backdrops for visitors needing to get an Instagram fix.
